OVERVIEW
Dining has long been an important part of daily life at Morningside of Fullerton. Tania Ramirez has watched it evolve firsthand, joining Morningside as a server 25 years ago and working her way through the department to become Food and Beverage Director.
Over time, what residents wanted from mealtime began to change. Some wanted greater flexibility in how food was prepared, while others wanted opportunities to enjoy the restaurant experiences, they once did. Morningside began looking at how its existing operation could continue adapting without losing the familiarity residents already valued.
In July 2025, Morningside partnered with Strategic Dining Services (SDS), bringing additional expertise and resources to a team that already knew its community well.
Challenges
Morningside wasn’t looking for a standardized dining model. The right partner needed to bring new resources and perspective while preserving the knowledge, culture and resident relationships already established within the community.
We want to give residents more than a meal. We want to bring the restaurant experience to them, with the choices, interaction and excitement that come with going out to eat.
TANIA RAMIREZ, Food and Beverage Director | Morningside of Fullerton

Solutions
Training & Onboarding
SDS added training and onboarding resources for Morningside’s dining team, giving leaders additional tools to work with new and existing employees. The added resources became another layer of support for a team continuing to introduce new ideas and experiences for residents.
Dashboards & Reporting
New dashboards gave Morningside’s dining leaders greater visibility into the operation and a consistent way to review performance over time. The reporting also gave the team another resource for understanding how the dining program was performing as new ideas were introduced.
Interactive Dining
Interactive dining brought chefs out from behind the service line and into direct contact with residents. Preparing food in front of the people they served gave culinary team members the chance to hear immediate feedback on their work, something they rarely experienced from inside the kitchen. The format also created a more personal exchange around the meal, with residents and chefs able to talk through preferences as dishes were prepared.
Restaurant-Style Experiences
Morningside introduced complete pop-up menus centered on Mediterranean, Mexican, Chinese and Southwest barbecue cuisines, with appetizers, entrées and desserts following each theme. During a Mexican food pop-up, servers rolled carts through the dining room and prepared fresh guacamole tableside.
Outcomes
- Expanded access to restaurant-style experiences for residents with fewer opportunities to dine out
- Greater recognition for culinary employees through direct resident feedback
- Residents invited friends and guests to join interactive dining experiences
- Resident response helped shape which experiences continued or returned to the dining room
